It is a plant with with a creeping rhizome with upward-curving, whitish, scaly, cylindrical tubers. The leaves are light green, with long sheaths and leaf blades. Arrowroot powder is a starch that is made by washing the harvested roots, grinding them into a pulp, and mixing the pulp with water. The resulting mixture is strained to remove the fibrous material, allowed to settle, and be air dried and then ground into a fine powder.
