Japanische Kochwein. Mirin. Zutaten: Glukose-Fruktose-sirup, Wasser, fermentierter Reis, Branntweinessig, Säuerungsmittel: Citronensäure. Mirin ist eine süße Würzsoße, die aus fermentiertem Reis gebraut wird und nach dem Brauprozess Alkohol und Zucker behält. Die Soße ist etwas zähflüssiger, hat eine gelbliche Farbe und schmeckt nach Reiswein, der mit Zucker vermischt wurde. Heute ist Mirin eins der wichtigsten Grundzutaten in der Japanischen Küche.
